Breakfast for Dinner

Hello lovelies. Many apologies for being so MIA lately...its been HECTIC! One funny thing I notice about myself when I'm insanely busy is that I crave breakfast for dinner. I don't know why...but almost every night for the past 2 weeks I've either made pancakes or eggs! Which brings me to this random post on...pancake recipes I love! Strange? Well, if you try these out you won't think so!
First up: Oatmeal Cookie Pancakes from Joy the Baker:
Seriously these are delish!
Here's one I'm going to try this week...Cornmeal Molasses Pancakes from Joy the Baker:
And finally, from one of my favorite breakfast places in the country, Bubby's, their famous Sour Cream Griddlecakes Recipe. I am not kidding - these are HEAVEN on earth!
Pancakes are kind of awesome in the sense that you can add whatever you like to them to spice them up. All you need is a couple of pancake mixes on hand (if you aren't into making them from scratch) - I prefer Arrowhead Mills Buckwheat Pancake & Waffle Mix or Kodiak Cakes Frontier Flapjack & Waffle Mix.
My favorite thing to do is make "Protein Pancakes" (which I discovered in Scottsdale this month on a trip) which mix hi-protein granola into the batter and are stuffed with berries and bananas. AMAZING. I attempted to photograph my creation - however, it was one giant not-so-photogenic pancake (but it sure tasted FANTASTIC!). I even used fresh blackberries with a little agave nectar to make a fruit topping on the stove - delish!

I'm trying all of those out soon. I have a big tub of sour cream I need to start working thru anyway.
When I was little we were at school discussing what we had for dinner as we went around the room. I announced to my class that we didn't have any dinner the previous night. Later my teacher mentioned it to my mortified mom who then explained it was because we had pancakes and eggs!
Breakfast for dinner is a special treat for my kids! Some of us love sauteed apples or yogurt on our pancakes and some are die-hard syrup people! These look delicious, thank you for sharing! Theresa
